Arugula, oh, how I love you! And Avocado. You know. Especially those perfect, nutty, buttery tasting perfect beauties. Grapefruit, Pomegranate, Yum, yum, YUM!!

This clean eating recipe salad is one of my Winter favorites, not merely a 4 Star culinary delight, but these are some medicinal powerhouses of nutrition!

Avocados are 85% fat, 50% of every cell membrane is made from fats; our brain is composed mostly of fat; many important vitamins are fat-soluble, and we can’t digest them without fat; essential hormones in our bodies are made from fats; the list goes on. Did you know that Avocados have a unique anti-inflammatory fat?

Isn’t it one of the foods that your body just loves? Every time I eat an avocado, my body thanks me, relaxing into that glowing bliss that tells me I’m immediately nourished.

Avocado’s have significant amounts of Vitamin K, B5, B6, C and Potassium. It’s also a powerful synergist, boosting our body’s to absorb the nutrients in other foods. For example...

Adding avocado to grapefruit (like in this salad), increases our bodies ability to absorb grapefruit’s antioxidants by 200-400%. Wow! How cool is that?

Arugula is a detoxifying bitter green, which supports healthy liver function. It is a cruciferous veggie, but this is one that is good for those with Hypothyroid (like Maca Root.) It contains the indole-3-carbinol, and isothiocyanates, both bioactive compounds which reduce chronic inflammation.

Grapefruit, well known for it’s metabolic boosting, fat burning and cleansing effects, also increases mental clarity and energy levels. One Grapefruit provides 75% of our daily Vitamin C, a substantial amount of Vitamin A, and is high in antioxidants.

Grapefruit also contain phytonutrients called limonoids, which boost the body’s production of glutathione, an essential detoxifier. Our liver can’t function without it.

It’s shown to have anti cancer properties, and contains a flavonoids called naringenen, which actually helps to repair damaged DNA. Woah! That’s a Superfood!

Pomegranates are well known for their anti-oxidant properties, they contain almost every known anti-oxidant! Some of which reduce inflammation, decrease joint pain, in those with arthritis, and protect the joints by blocking the production of a cartilage-destroying enzyme in those with Osteoporosis.

Pomegranate's antioxidant activity is known to inhibit cell proliferation and invasion, and promote apoptosis (cell death) in various cancer cells, like Breast cancer and Prostate cancers.

Pomegranates also contain a unique Omega 5 that has amazing cellular regenerate properties, which has been shown to contribute to much younger looking skin. Pomegranates are anti-bacterial, anti-viral and anti-fungal.

They have shown to be effective against Candida Albicans overgrowth and infections and inflammations of the mouth, such as Gingivitis. Pomegranates also lower High Blood pressure. Aaaand...

Another area of interest, is that studies show that Pomegranates have an enhancing effect on certain biological systems, enhancing penile blood flow, which means larger, harder erections and have been shown to reduce erectile dysfunction. Jewels that just happen to support the family jewels! Tee hee

Clean Eating Recipe: Winter Jewels Salad

​Ingredients (serves 2)
Arugula
1 Large Ripe Avocado
Sliced1 Ruby Grapefruit
Slice segments in half1 Pomegranate
Sliced and Seeds aka Fibrils removed Parsley
Finely minced 2-3 Green Onions
Balsamic Vinegar
Best quality Extra Virgin Olive Oil
Sea Salt (Smoked Applewood Salt is a fav)
Fresh Peppercorns & Coriander, Coarse Grind
Optional Ingredients:
Italian Herbs, Minced Garlic & Onion for the Dressing.
Toasted Pumpkin Seeds, Crispy Fried Onions.

Directions:
1. Mix Oil, Vinegar, Salt, Pepper, Herbs and Spices in a small jar or cruet.
2. Arrange a few handfuls of Arugula on each plate, and Spiraling Avocado slices on top.
3. Salt the Avos. Add Grapefruit pieces, and sprinkle liberally with Pomegranate Fibrils.
4. Drizzle with dressing, and add a liberal amount of detoxifying, blood nourishing Parsley, and a Tbs or so, Green Onion.
5. Paint your plate with this nourishing palette of color, taste and texture, having fun and enjoy creating this beautiful feast of a salad!
6. Liberally apply plenty of love and joy throughout the process.
7. Sprinkle with toppings that delight your senses.
8. Add Freshly ground Coriander and Peppercorns, Salt.
